The building currently known as Brinkman’s was constructed in 1949 on a site with a long industrial history. Originally home to the Lakeside Elgin Butter Company, the facility later became Daley Creamery before closing in 1941. After the creamery shut down, the structure was demolished, and Radio Television Products Corp. (Ratel) built the current building in its place.

The lake behind the building serves as a reminder of its past use in the dairy and laboratory industries. While earlier industrial operations, such as the Lakeside Cooperative and cement plant, contributed to local infrastructure, the current structure reflects the mid-20th-century shift in industry and technology.
